Our family is gearing up for our first pre-season game this weekend. We are all quite excited. Football and fun snack foods go hand in hand – and we’ve been planning our first pre-game party for a few weeks. I tried out a new recipe and it was a hit! Cheesy potato bites truly are the perfect game day food.
Cheesy Potato Bites
I actually saw a similar recipe on Facebook about two weeks ago. I thought they looked tasty but didn’t click on the recipe and then couldn’t find it when I was looking how to do it. Thankfully, this one is simple. If you need a quick game day recipe then Cheesy Potato Bites use ingredients most of us already have on hand.

Ingredients
- Potatoes
- Olive Oil
- Salt and Pepper
- Garlic
- Sliced Cheese
Tasteful Selections 2-bite Ruby Sensation potatoes are perfect for this recipe. Simply cut slices down the potato without going through the potato. I made it thin thinking they might come out a bit more crispy.
Toss potatoes in about 2 T of olive oil with salt and garlic to taste. Make sure you get the olive oil all over and even inside the potato.
What I love about Tasteful Selections potatoes is how fast they cook. I roasted these potatoes in the oven at 425 degrees for 20 minutes and they were very well done.
Once they cooled a bit, I was able to add sliced cheese to my potatoes. Then you put them back in the oven for about 5 minutes or until the cheese is nice and melted.
Don’t these look so good? Honestly, potatoes and cheese is such a great comfort food and perfect game day food!
Top with your favorite toppings. My husband loves sour cream and salsa. If I had green onions or chives in our fridge I would have added those.

That is so smart!! I have seen a similar dish on a blog before (I think they were called hasselback potatoes?) with butter in the slices, but I much prefer the idea of using cheese. My kids would LOVE this.
