I visited my local farm today. In Western Washington we have a lot of great family farms. I am blessed because the one in my small town is also organic. I was able to pick up Strawberries, Raspberries, Bell Peppers, Tomatoes, and Basil today. My kids ate up the berries pretty quickly today – I’m gonna have to stop and get more!
Which summer fruits or vegetables do your kids love?

Here are two recipes that are pretty popular at my house:
Use up those awesome summer tomatoes in a Skinny Pesto Pasta. I dice ’em up small and made this for my six year old yesterday. I used fresh basil, organic fresh tomatoes and Angel Hair pasta. She LOVED it.
Another favorite in our house is Tex-Mex Brown Rice Salad:
Use that summer corn and make this very tasty, vegan salad. The entire family loves this. But we do love black beans and rice quite a bit…

Your Tex Mex salad looks great and healthy! I would use brown rice for it and add some other veggies to it.
