A Tex-Mex Brown Rice Salad is a perfect summer evening meal. In fact, my 5 year old even loved it and my husband wants it again next week.
Since I am on Weight Watchers, I am always on the look out for low points plus recipes ideas that are also vegetarian. This recipe was adapted from the Weight Watchers website and is only 6 points plus!
For this recipe I tried a new product: Success® Rice Boil-in-a-Bag Brown Rice. Before I opened the box, I wasn’t sure what to expect. But let me tell you, I LOVED this no mess, no measuring brown rice. You drop the bag into a pot of water and once boiling it cooks in 10 minutes. Easy Peasy! Voila!
While the brown rice was cooking I threw the other ingredients in the glass dish above. This is literally a 15 minute vegan meal! I love meals that I can cook quickly, are healthy, and they only take on bowl. Throw it together and you have something super tasty!

- 1 Cup Success® Rice
- 1 Can 15oz Black Beans, rinsed and drained
- 1 Cup Frozen Corn Kernals, thawed
- ⅓ Cup green onions, chopped
- ¼ Cup Cilantro, chopped
- 1 T Jalapeno Peppers, minced
- 2 Limes
- Salt to taste
- Pepper to taste
- Cook brown rice according to package instructions. Mix beans, corn, green onions, cilantro, and jalepeno peppers with still warm brown rice. Add juice of 1 lime, salt and pepper. Serve with lime wedges.
- Serves 4 heaping 1 cup servings.
- Only 6 Weight Watchers plus points.
